Date molasses or date syrup is a natural sweetener. This syrup is very nutritious and if you want to reduce the amount of sugar, I recommend date molasses. It is perfect for breakfast and as a snack with toast and provides the daily energy you need.
What is date molasses or date syrup?
Date molasses or date syrup is made from cooked date extract. That is, after washing the date, they squeeze it completely to extract its juice. Then, the sap is heated to thicken. The obtained syrup is very sweet, soft and delicious. Its sweetness is just right, not too much and not too little.
Is date syrup the same as date molasses?
Actually, if we look very closely at this issue, molasses is obtained from sugarcane and its concentration is different from date syrup. But in general, date molasses and date syrup are considered the same because the uses and appearance of both are similar.
How to prepare date molasses
Molasses or date syrup is a natural sweetener. This sweetener is a good substitute for sugar.

ingredients:
Dates 3 and a half kilograms
Water as needed

Remove the cores
Take the dates out of the box and put them in a container. Wash them if necessary. Then, remove the core of the dates
Soak and squeeze
Place the dates in a suitable container, pour boiling water on them and let them soak for one to two hours until they become soft. Pour enough water to completely cover the dates, you don't need more than that. After soaking in boiling water for about 2 hours, squeeze the dates until they are soft. Now the dates are as shown below (picture on the right)
flatten out
Place a strainer over the pot. Pour the dates along with the water into the strainer so that the date juice flows into the pot. Squeeze the dates as much as you can to extract the juice. In this way, you separate the skin and pulp of the dates while the juice enters the pot.
Put in a net cloth, pour water on it and squeeze
Gently pour the pulp into a cheesecloth and tie it tightly. The strainer should remain on the pot. Press the cloth firmly so that the excess juice enters the pot. Do not pour all the pulp into the cloth at once, pour a little at a time so that you can easily press firmly. If you don't have lace fabric, don't worry. You can use a very fine sieve instead. Take a cloth from the upper part and press firmly until the date juice comes out and enters the pot. Continue doing this until only the pulp remains. Every time you pour a little date into the cloth, add a little water to it. At this point, I poured about half a liter of water over the dates.
heating
Put the obtained date juice on a low heat until its water evaporates and becomes thick. Do not cover the pot so that the water evaporates faster. Finally, about a quarter of the date juice remains and a dark brown syrup is obtained. Of course, the color of date molasses depends on the amount of water you add to it.
The important thing is not to overheat it so that it burns. It takes between one and two hours for date syrup to reach the desired concentration. Its concentration also depends on your own taste. At the end of the work, try to stay by the pot and stir the syrup continuously until it reaches the concentration you need. Note that after cooling, it will thicken a bit. If it is a bit pasty or frothy after cooling, pass it through a very fine sieve.
Then, put it in a closed container and store it.
